Balanced well with spicy meatballs. We think it's more of a food wine than a sipping wine, try giving it a little time to breathe to really experience the complex flavors.

So Much Celebration, So Much Wine

There has been so much in our life to celebrate recently. A new home, a new baby, and the special days around both. And for each, we need to find a bottle of wine worthy of the day. So when my little brother came, with his new fiance, to visit our baby over this Fourth of July week, we had to find something to top all of our recent evenings.

Our guests were not wine afficianados, but we decided to try something special: Cabernet Sauvignon from Ad Vivum in Napa seemed an exceptional but approachable wine, a little bit of Americana in a glass. Big, bold, ripe fruit, but with a balance of other interesting flavors, it made for a perfect glass with a big celebratory meal of grilled beef brisket, salt potatoes, and veggie coleslaw. It had a range of flavors that made each bite of food a little more special, as we caught up on our new and exciting life events.

This wine was different than we expected, more earthy than your typical Napa Valley fruit-forward Cabernet, this being due to the vineyard's location in the St. Helena mountains.

A Failure to Pair

There are lots of recommendations, but there are no hard and fast rules when it comes to pairing wine with food. With French and Italian dishes, there is a long history of what wine to pair with specific dishes, but American cuisine is a bit different.

Macaroni and Cheese is a traditional American dish that can be tough to pair, matching the wine to the cheese that makes up the dish.  This time around, we picked a trio of strong flavored cheese: Fontina, NY Extra Sharp Cheddar, and Gorgonzola, giving us some sweet funk, and a healthy dose of saltiness and earthiness. Thinking of cheese plates, we wanted a fruitier wine to add some sweet and fruity flavors to complement the cheese, with just a hint of dry backbone to cut through the richness. Grabbing a bottle of Napa Valley Cabernet Sauvignon, we sat down to our meal.



Unfortunately, this was a case where we failed to read the entire label. Napa Valley is a large AVA, with a wide range of terrior. While the main valley is internationally famous for those "fruit bomb" Cabernets, redolent with bright, ripe fruit, the region stretches into the foothills of the mountains, creating a very different climate. We had chosen a wine from the St. Helena Mountains which tends towards more the cooler-climate, "Old World" style wines: this Cabernet was much earthier than we had expected. There was some wonderfully complex flavors, hints of fruit and wood balancing off the strong flavor of stone and graphite, but ultimately it wasn't the pairing that we had been hoping for.

It's always a good thing when the wine elevates the meal by complementing the food. Sometimes it doesn't work out that way, but unless something really goes wrong, you at least get to enjoy a glass of good wine with the meal. And we did, indeed.

Quick Review: Split Rock Winery Cabernet Sauvignon

This wine needed a little more time to "open up" than we normally give our reds. Initially, the flavors weren't as balanced as we would like, but by the second glass the oxidation had mellowed it out a bit, balancing fruit and spice notes, with a bit more pepper than is found in most California Cabernet Sauvignon. We're still wildly impressed that this came from a winemaker who is a hobbyist. You would never have known.  Of course, you can't find this wine in any shop or restaurant menu, but we review it here as a glimpse into what's going on behind the scenes in this industry. People are making their own wine, and it's good!

Quick Review: Silver Springs White Cabernet Sauvignon

Aged in cognac and whisky barrels, hints of the smokey alcohol notes augment the mostly sweet flavors. Seeing a white Cabernet Sauvignon was something very unusual, and reminds us that all grape juice is white: it is the color of the skins added back to the juice that produces the color red in red wine.

Did you know...? About Cabernet Sauvignon

Cabernet Sauvignon is a red grape, grown throughout the wine world, second only in total production to Merlot. Along with Cabernet Franc and Merlot, it is one of the three components in the Bordeaux blend. It is also one of the main grapes that brought Californian wines to world prominence. The wines tend to be fruity in the New World and earthy in the Old World, with strong notes of currants, along with strong traces of tannins and the oak from barrel aging, along with deeper earthy and herbal note that come with bottle aging. Cabernet Sauvignon is often a prime candidate for bottle aging, as the strong flavors of the wine can stand up to decades of aging. In California, the grapes reach a high level of ripeness, creating extremely "hot" wines, meaning high in alcohol content.

Most Cabernet Sauvignons are fruity wines, with dark red fruit flavors. They also have a tendency to pick up subtle wood and earthy notes from their time in oak barrels. They are also often "heavy" bodied, although this one was less so, probably due to its origins in the cooler climate of the Finger Lakes.

Steak Dinner at Home

Wine and steak is the most American dinner pairing that I can think of. While the French have wine for every meal, and Americans are happy to drink beer with almost anything, a perfectly cooked steak at a nice restaurant almost demands a high quality red wine. While we don't often get out to enjoy a steak dinner, we do try to enjoy one at home from time to time. And while we don't buy the most expensive of wines, like Opus One, we do try to find the red wine best-suited to the pairing that won't break the bank.

The simple rule with pairing wine with steak is: go with red. Unless you have some deep rooted aversion to red wine, it will be your best option, providing the spice, or earthiness, or even that hint of red fruit that will bring out the best flavors in red meat. We picked up a bottle of Chateau Lafayette Cabernet Sauvignon, and it worked out well. The wine had hints of fruit, along with a certain spiciness that added some complexity to the steak. There were also some deep earthy notes that played well with the wilted kale salad that accompanied the steak. In both cases, the wine wasn’t so strong as to overpower the flavors of the food, instead bringing some added layers to the meal.

QUICK REVIEW: Wines from Mexico

Until our dinner at Casa Oaxaca, in D.C., Nate and I had no idea that Mexico had a wine region.



Part of adventure is trying new things. Surprisingly, these wines were very light. However, they had lost most of their fruit flavor notes (the heat will do that!). But still worth talking about, as we expand our wine knowledge.

Both wines come from L.A. Cetto winery.

Tina's choice:
Mexico, L.A. Cetto, Chenin Blanc 2009

(This wine had probably been fruity at one point, but had lost most of that flavor. Hence, the "smooth" descriptor).

Went excellent with Nate's steak.

Ultimate Wine & Cheese Pairing: Beecher's Handmade Cheese

Remember when we told you to skip the "house wine" at your local bar? Apparently, we lied.

Beecher's Handmade Cheese is the latest edition to the restaurants lining Broadway between Union Square and the Flatiron Building. For cheese lovers, the first floor cheese shop and cafe is the ultimate. Handcrafted cheeses and other artisanal treats await. One refrigerator case is stocked with variations on the grilled cheese sandwich. Our mouths watered. Our stomachs growled. But we were there with friends to visit The Cellar, a vibrant wine bar decorated to feel like both a wine cellar and very comfortable lounge/study. It’s also a working cheese cellar where they age their cheese.
